Crusted Parmesan Chicken Breasts

Ingredients:


  • 1¼ lb boneless/skinless chicken breasts, butterflied or cut into medallions
  • ½ cup mayo (for fewer calories use light or fat-free mayo)
  • ½ cup grated Parmesan cheese
  • ½ cup Italian breadcrumbs (if you only have regular, just add a teaspoon of Italian seasoning)
  • non-stick pan spray as needed

Cooking Directions:


Preheat oven to 425°F.

Mix the mayo and grated Parmesan together and spread evenly on chicken breast.  Place on baking pan sprayed with non-stick spray.

Top chicken with breadcrumbs and bake for 15 minutes. Switch oven to Broil for another five minutes for a crispy crust.  Chicken is done when punctured with a fork and juices run clear. Internal temperature must reach 165°F.
