BBQ Chicken Stuffed Potatoes

Ingredients:


  • 2 large baking potatoes
  • 3 cups (approximately 1 pound) of leftover cooked chicken, pulled from bones or diced
  • 1 cup of your favorite BBQ sauce

Cooking Directions:


Bake the potatoes in a preheated 350°F oven for 1 hour or until done.

Meanwhile, when potatoes are almost done, mix chicken and BBQ sauce together in a covered microwave safe dish. Heat until heated through and chicken reaches 165°F.

Split the potatoes in half, one half per serving. Top each potato half with the chicken and BBQ sauce mixture. Add your favorite toppins such as green onions or cheese and serve with fresh fruit or a light salad for an easy lunch or dinner.
